Prepare the Mixed salad, and salsa. Mash the avocado with a dash of lemon juice.
Divide the corn chips and spread on each plate leaving a whole in the centre. Add the beans, top each of the beans with a small amount of greek yogurt, then the salad, toped with the avocado mash and then the salsa on top.
*Notes - the mixed salad can include anything tomato, shredded/grated carrot, shredded cabbage red/white, cucumber, capsicum, bean shoots, onion, herbs (parsley, coriander) lettuce, etc. Toss together.
