- 3 tbspRoast Pumpkin Hummus
- 10piecesCherry Tomatoeschopped
- 1/4mediumRed onionchopped finely
- 4medium Lettuce Leaves
- 1 pinchsalt and pepper to taste

Method
- Toast the seed bread on both sides.
- Spread with hummus, top with lettuce leaf.
- Mix tomato, avocado and onion and salt and pepper in a bowl.
- Top the lettuce with the mixture, sprinkle with fresh herbs and serve. Add a little salt and pepper to taste. Enjoy.
